Both are very viable options when you consider the price difference, I think I'm going to try the 680 this time, who knows, it might work just fine without any issues.

Power efficiency and more long-lasting usage Snapdragon 680 has the edge because Cortex A-73 is 2x smaller than Cortex A-76 which is +10% efficient but performance-wise Dimensity 810 will lead by half a margin.
