The difference is all in the TDP. The error in the naming scheme. By(t)e

It seems that the 7840hs is better for performance, but since the 8840HS is newer, it will have support for longer than the older model. Also, the 8th gen Ryzen chips have better USB-C compatibility compared to older models. This becomes glaringly obvious when you want to plug in a docking station to your laptop running an older Ryzen chipset and you don't have the ability to charge you laptop, run an external screen and USB pass-through on a single USB-C interface. Unless you intend on running high-end USB-C connectivity (support will primarily depend on the motherboard but since the 8840HS is newer will probably have better support), Go with the 7840HS. I have several PCs under my care as an IT professional that are currently running the 7840HS and it is a MONSTER of a chip. I have on order a laptop with the 8840HS and will test it side by side to one running the 7840HS and see how it goes. The only reason I went with the 8840HS was due to USB-C conectivity. For some reason I can't find any 7840HS laptops with 15-16in chassis that support USB-C ALT-mode or equivalent to Thunderbolt 4.

So, the R7 8840HS is basically a low-power version... What kind of naming scam is that? I was hoping for a bit of a boost since I plan on buying a mini PC that has that SOC, but it costs +$50 more... Ryzen 7 7840HS it is then...
