Both are fairly budget chips, they are good chips for their price. The snapdragon 680 is a newer chip and the g95 is a budget gaming-oriented chip that's a bit older. The main differences are snapdragon 680 being 6nm and the g95 being 12nm and how the snapdragon is made for everyday use as opposed to the helio which is made for gaming use. You can't expect much out of gaming from this range as it's still budget chips going into budget phones but you get an enjoyable decent gaming experience. These chips will not lag or crash as they have been retained well.

I'm a Redmi Note 11 user (SD680), I got around 8hrs 43mins On Screen time with medium brightness. The gaming experience is on par with my father's Redmi Note 11S (G96).

For gamers, the HelioG95 is the one "of course it can do more functions but I see it dedicated to playing", for those who use the cell phone for daily use the Snapdragon 680 is the one. Both are good processors oriented for each type of person according to their needs.
